I recently had an unexpected day off and decided to make a work-intensive meal!
Here are the results:
First on the menu: Pineapple-Carrot Jell-O. Now, this is a dish we had growing up, and Mark looked at me like I was crazy when I told him what it was. But he just finished off the last of it this afternoon! Next time I make it, I'll omit the salt, as it just tasted like salt to me. Mark couldn't taste it, but I barely ate any because of the excessive saltiness. Which could've been mostly in my imagination.
Next, macaroni and cheese. This was the first time I've actually made baked mac 'n cheese. It turned out quite nicely and was really easy to make.
I tweaked a recipe I found online for chicken, using a mixture of crushed oyster crackers, cornflakes, and ritz crackers mixed with some seasonings for coating. It turned out really well despite the fact that I had to use garlic butter to stick the crumbs to the chicken because I used the last of our eggs making this....................

Chocolate cake with chocolate frosting....from scratch! Another first-time effort. And I must say, it was quite delicious. Very dense, very chocolaty, and quite delicious. And because Mark hasn't been eating the leftovers, I have. Lots and lots of chocolate cake. Yum......
By the way, I still want a baby polar bear!
